SHIITAKE (Lentinula edodes)
The world's second most commonly cultivated mushroom world wide, with its origins dating back two-thousand years. Known not only for its delicious flavor, but also for its strong immune enhancing properties, Shiitake is a favorite in both the culinary and the medicinal circles. Mycality offers three sizes of Shiitake: jumbo, medium, and petite. Dried Shiitake mushrooms are also offered when available.

OYSTER (Pluerotus ostreatus)
A delicious mushroom with a mild seafood flavor. Oyster mushrooms are known medicinally to contain high amounts of Lovastatin, a compound commonly used to reduce cholesterol levels in humans. Mycality produces a variety of fresh oyster mushrooms: white, blue, pink and yellow. Dried mushrooms are also offered when available.

LION'S MANE MUSHROOM (Hericium erinaceus)
Relatively unknown in western circles. A phenomenal mushroom that has become a stand out for Mycality at the local farmers' markets, Lion's Mane has a flavor and texture similar to that of crab or lobster. This mushroom is a "must try" for those looking to expand their culinary adventures. Once again, the Lion's Mane has medicinal properties that may even exceed its culinary prowess. It is known for its positive effects on the nervous system and its ability to stimulate neuron re-growth.

NAMEKO (Pholiota nameko)
The traditional Miso soup mushroom. Because of its slimy texture, this small mushroom is often overlooked. However those who can "get beyond" this feature will enjoy the delicious cashew-like flavor of Nameko. It makes it an excellent addition to soups and stir fry dishes alike.

KING OYSTER (Pleurotus eryngii)
An extremely popular mushroom in Korea and South East Asia, is quickly gaining popularity in the United States. A dense and meaty mushroom with a chicken-like flavor and texture, King Oyster is a great meat substitute. Use them in soups, stews or stir fry, or for a real treat, try them tempura style. The King Oyster, high in Vitamin B1 and B2, is associated with anti-cancer activity, positive effects on the immune system, anti-viral, antibiotic and anti-inflammatory activities, all due to its concentration of beta-glucans. And like the oyster mushroom, it produces Lovastatin, which may reduce cholesterol and promote vascular health.

ENOKITAKE (Flammulina velutipes)
Another mushroom that is well known in both the culinary and the medicinal markets. Medicinally, the Enokitake is known for its anti-tumor compounds, beta-glucans and glycoproteins. In the culinary world, this mushroom is common in Asian stir fries. With a crunchy texture similar to bean sprouts, Enokitake is a great addition to many dishes.

REISHI MUSHROOMS (Ganoderma lucidium)
Known as the Chinese mushroom of immortality. Anti-tumor, anti-viral, cholesterol reducing and anti-fatigue, are just a few of the properties attributed to this amazing mushroom. Because of its strong bitter flavor, this mushroom is commonly consumed in teas, powders and tinctures.

MAITAKE (Grifola frondosa)
A delicious edible as well as a potent medicinal mushroom. It has been used in cancer treatment and also to relieve some of the side effects of chemotherapy. Ongoing research is testing its use in a variety of medical conditions, particularly those related to the immune system. Maitake mushrooms are an excellent addition to soups, stews and stir fries.
