
SHIITAKE (Lentinula edodes)
Fresh Shiitake Mushrooms, great meat flavor, nice texture, great for asian dishes, risotto, stirfry, and pasta.
The world’s second most commonly cultivated mushroom world wide, with its origins dating back two-thousand years. Known not only for its delicious flavor, but also for its strong immune enhancing properties, Shiitake is a favorite in both the culinary and the medicinal circles. Mycality offers three sizes of Shiitake: jumbo, medium, and petite. Dried Shiitake mushrooms are also offered when available.

KING OYSTER (Pleurotus eryngii)
An extremely popular mushroom in Korea and South East Asia, is quickly gaining popularity in the United States. A dense and meaty mushroom with a chicken-like flavor and texture, King Oyster is a great meat substitute. Use them in soups, stews or stir fry, or for a real treat, try them tempura style. The King Oyster, high in Vitamin B1 and B2, is associated with anti-cancer activity, positive effects on the immune system, anti-viral, antibiotic and anti-inflammatory activities, all due to its concentration of beta-glucans. And like the oyster mushroom, it produces Lovastatin, which may reduce cholesterol and promote vascular health.

LION'S MANE MUSHROOM (Hericium erinaceus)
This wonderful healing mushroom has a crab flavor and is said to improve cognitive function and help with nervous system repair. Use in seafood dishes or on top of a steak for a surf and turf style meal.
Relatively unknown in western circles. A phenomenal mushroom that has become a stand out for Mycality at the local farmers’ markets, Lion’s Mane has a flavor and texture similar to that of crab or lobster. This mushroom is a “must try” for those looking to expand their culinary adventures. Once again, the Lion’s Mane has medicinal properties that may even exceed its culinary prowess. It is known for its positive effects on the nervous system and its ability to stimulate neuron re-growth.

OYSTER (Pluerotus ostreatus)
A delicious mushroom with a mild seafood flavor. Oyster mushrooms are known medicinally to contain high amounts of Lovastatin, a compound commonly used to reduce cholesterol levels in humans. Mycality currently produces a variety of fresh blue oyster mushrooms. Dried mushrooms are also offered when available.

REISHI MUSHROOMS (Ganoderma lucidium)
Known as the Chinese mushroom of immortality. Anti-tumor, anti-viral, cholesterol reducing and anti-fatigue, are just a few of the properties attributed to this amazing mushroom. Because of its strong bitter flavor, this mushroom is commonly consumed in teas, powders and tinctures.

CHESTNUT MUSHROOMS (Pholiota Adiposa )
A flavorful mushroom with a firm texture and a rich, nutty taste. Chestnut mushrooms are versatile in cooking, enhancing the flavor of soups, sauces, pastas, and stir-fries. They are also known for their nutritional benefits, containing antioxidants, B vitamins, and minerals like selenium and potassium. Fresh and dried varieties can be used to add both taste and health benefits to a wide range of dishes.
